Squash, Winter – Pink Banana Jumbo
This vining squash produces fruits that can grow to 4 feet long, 1 foot across and weight 70 pounds. Smooth pink-orange skin with sweet yellow-orange, fine-grained flesh. Excellent as a vegetable side dish, in pies and other baked goods with plenty left over canning. Substitute into recipes calling for acorn or butternut squash. Winter squash takes longer to mature than summer varieties. Maturity in approximately 115 days.
