Annual. The flat leaf parsley has a more assertive, robust flavor than the curly varieties and is, therefore, generally preferred for cooking. Broad, dark green leaves may be cut repeatedly. Used fresh or dried.

Planting Instructions

  • Full sun to partial shade
  • Sow seeds 1/8” - 1/4” deep
  • Space / thin 8” - 12" apart in garden
  • Germinates in approx. 14 - 30 days
  • Matures in approx. 75 - 85 days


Sow seeds directly outdoors as soon as soil is workable. Cover with 1/8- to 1/4-inch fine soil. Keep soil moderately moist during germination. To speed germination, soak seeds in warm water for 24 hours before planting.

Care & Harvesting

Parsley grows best in a sunny location but also does well in partial shade. Prefers relatively rich, moist, well-drained soil.

Cut entire leaves from the outer edge of the plant. Cold hardy which allows for winter harvesting. At the end of the gardening season, cut the entire plant for storage. Fresh parsley will retain its freshness & flavor longer if stalks are placed in a container of water and refrigerated.

Use in Cooking

Use fresh whenever possible. Long-cooking dilutes flavor, so add to recipes at the very end. Chop & toss in with mashed potatoes or other root vegetables. Add fresh leaves to a sandwich. Even bake into meatballs.  For salads, treat parsley as you would lettuce: mix with seeds, nuts or tomatoes and top with your favorite dressing.


To dry: tie stems together.  Hang in a warm, well-ventilated area out of direct sunlight.  Once completely dried, store in an airtight container.  (Recommend crumbling only when ready for use.)

To freeze: remove fresh leaves from stems. Rinse & pat dry. Place in an airtight container.
